Special Wine Paring Dinner to Kick Off Briarfest
The Knights of Columbus is hosting a special Wine Paring Dinner as a social event to kick off the 2015 Briarfest celebration.  Parish members and their friends are invited to this special event:
Location: The Margarita at Pine Creek, 7350 Pine Creek Rd, Colorado Springs, CO 80919.
Date: Thursday August 27th.  Time: 6:30 PM
Menu:

*         Cotija Crusted Shrimp Tostada, Avocado Puree, Ginger-Mango Mojo & Pickled Tomatillo

*         Roasted Sweet Corn Vichyssoise, Heirloom Tomato & Roasted Corn Relish, Fresh Basil & Lime

*         Roasted Wild Mushroom Salad, Farmers Greens, Candied Beets, Chervre, Charred Leek-Dijon Vinaigrette & Toasted Hazelnut

*         Red Wine Braised Boneless Beef Short rib, Aged Cheddar Polenta, Horseradish Gremolata, Pearl Onions & Carrots

*         Chocolate Panna Cotta, Chocolate Biscotti, Espresso-Orange Cream
This meal will be paired with 4 wines selected by the wine sommelier that is conducting the Briarfest wine tastings, Jeff Knight.
THE CHEF WILL PREPARE A GLUTEN FREE MEAL OR A MEAL FOR ANYONE WITH SPECAIL DIET REQUIREMENTS!!!
Cost: $78 Total for dinner and wines, includes tax and tip.  $58 total if you want the meal without the wine. (designated drivers, folks that don't want wine, Jae, etc.)
